Summer Recipes: Watermelon Rind Jam


I brought my Grandma watermelon rind cubes, so she can use them in her salad (find a nice watermelon rind salad recipe here: https://heyjoude.blogspot.com/2019/06/easy-watermelon-rind-salad_23.html?m=1). But she turned them into a delicious jam, that is extremely easy and worthy of being shared. Here it is: 


Ingredients: 

  • at least 20 Watermelon rind cubes  
  • at least 2 cardamom pieces  
  • at least 5 fresh ginger slices 
  • at least 4 cloves 
  • at least 1.5 cups of sugar 


There are no exact measures given to the ingredients, as you can put as much or as little as you like. If you want the jam sweeter you can definitely add up to 3 cups of sugar to the same amount of watermelon rind cubes. 


Preparation: 

  • Boil ingredients for 30 mins in hot water
  • Add cardamom, ginger, cloves and sugar; stir 
  • Leave for 15 minutes and then turn off the heat and leave to cool


Presentation ideas: On crisped toast, with cake or accompanying a croissant or other baked goods.
